Easy King Ranch Chicken Recipes

 Melted cheese, corn tortillas, peppers, and juicy shredded chicken are all layered together in this creamy, cheesy King Ranch chicken casserole. It's the ideal comfort dinner for a weeknight!

Ingredients:

  1. 1 tablespoon olive oil
  2. 1 tablespoon butter
  3. 1/2 cup diced onion
  4. 1/2 cup diced red bell pepper
  5. 2 cloves garlic, minced
  6. 2 cans cream of chicken soup
  7. 1 cup chicken stock, divided
  8. 3 cups cooked and shredded chicken (I like to use rotisserie)
  9. 1/2 teaspoon chili powder
  10. 1 teaspoon cumin
  11. 1 teaspoon ground black pepper
  12. 1/2 teaspoon cayenne pepper
  13. 1 teaspoon kosher salt
  14. 12 Corn Tortillas
  15. 2 cups grated cheddar cheese


Instructions:

Step:NO:1

Set oven temperature to 350°F. Apply a thin layer of cooking spray to a 9 x 13 baking dish and place it aside.

Step:NO:2

Heat the butter and olive oil in a big skillet over medium heat.

Step:NO:3

Simmer the red bell pepper and onion for 7 minutes, or until they are tender and transparent. Garlic is added and cooked for one minute.

Add the chili powder, cumin, pepper, cayenne, cream of chicken soup, and 1/2 cup of chicken stock. Stir to coat after adding the chicken. After bringing the mixture to a simmer, turn off the heat.

Step:NO:5

 Assemble: Fill the baking dish with the remaining 1/2 cup of chicken stock. Cut four tortillas in half, then distribute them equally over the pan of chicken stock. Spoon out a third of the chicken mixture onto each tortilla. Do this two more times with the entire mixture and all twelve tortillas. After adding the cheese, wrap the whole thing tightly with aluminum foil.

Bake for forty minutes with a cover on. Before serving, take the casserole out of the oven and let it sit covered for ten minutes.
