Easy Lemon Chicken Orzo Soup Recipes

 Made in one pot, this lemon chicken orzo soup has hearty ingredients including delicate orzo noodles, juicy shredded chicken, vegetables, and herbs. The broth is made extra smooth by the egg yolks and lemon!

Ingredients:

  1. 4 quarts of warm water
  2. 1/4 cup kosher salt
  3. 1 1/2 pounds boneless, skinless chicken breasts
  4. 2 tablespoons olive oil
  5. 3 medium carrots, peeled and diced
  6. 2 ribs celery, diced
  7. 1 medium yellow onion, diced
  8. 3 cloves garlic, minced
  9. 6 cups chicken broth
  10. 2 tablespoons finely chopped fresh dill
  11. 1 teaspoon dried oregano
  12. 1 teaspoon kosher salt
  13. 1 teaspoon fresh black pepper
  14. 3/4 cup dry orzo
  15. 2 large egg yolks
  16. Juice of 2 medium lemons (about 1/4 cup)
  17. Optional – Zest of 1 lemon
  18. More salt and pepper to taste


Instructions:

Step:NO:01

Cook the chicken in brine: *Refer to the note. In four quarts of warm water, dissolve the salt. After the chicken has cooled down, submerge it in the salt water for 15 minutes. The chicken can be brined for up to an hour, but if it's more than fifteen minutes, it needs to be refrigerated.

After taking the chicken out of the brine, pat it dry completely.

Step:NO:03

To cook the chicken, place a 7-quart pot or Dutch oven over medium heat with the olive oil. When golden brown, add the chicken breasts and cook for three minutes on each side. After taking the chicken out of the pot, set it aside.

Cook the chopped onion, celery, and carrots in the pot for five to seven minutes, stirring now and then, until they are tender. Cook the garlic for one more minute after adding it.

Prepare the soup: After adding the chicken broth, dill oregano, salt, and pepper, return the chicken to the pan and bring it to a boil. For ten minutes, simmer over medium-low heat.

When the orzo is cooked, add it to the stew and simmer for an additional ten minutes.

After taking the chicken out of the pot, chop it into cubes or shred it with a fork. Put the chicken back into the saucepan.

In a small bowl, mix together the egg yolks and gradually pour in 1/2 cup of the heated broth. Stir the egg mixture into the soup until it thickens and is well combined.

If preferred, stir in the zest and fresh lemon juice. Adjust the seasoning with salt and pepper as needed.
