As you preheat the oven, dry brine the chicken:
Place the chicken breasts onto a chopping board or platter. Using your fingertips, gather about half of the salt, hold your hand at least a foot over the cutting board, and then evenly distribute the salt over the chicken. Turn them over and continue until all sides are nicely seasoned.

Bake, rest, and serve: Bake for 20 to 30 minutes at 425°F, or until an instant-read thermometer inserted into the thickest portion of each breast registers at least 155°F.
