 Ingredients:

  1. 3 pounds boneless, skinless chicken thighs, trimmed of excess fat and cut into 1-inch pieces
  2. 1 tablespoon minced ginger
  3. 3 limes
  4. ¼ cup soy sauce
  5. 1 teaspoon sesame oil
  6. 2 tablespoons olive oil
  7. ¼ cup honey
  8. 3 cloves garlic, minced
  9. 2 teaspoons kosher salt
  10. ½ cup chopped roasted peanuts
  11. ½ cup chopped cilantro
  12. Rice to serve

Instructions:

Step:No:01

To marinate the chicken, combine the chicken, ginger, soy sauce, sesame oil, olive oil, honey, garlic, and salt in a big dish. Zest and juice one lime.

Step:No:02

Toss to mix and evenly coat the chicken. Give the chicken an hour to marinate.

Step:No:03

Cook the chicken: Turn up the heat to medium-high in a big skillet. Together with a few tablespoons of the marinade, add half of the chicken to the pan. Cook, stirring periodically, until cooked through and browned. Take the chicken out of the pan and do the same with the rest of the chicken.

Step:No:04

After the chicken has cooked through, return it to the pan along with one cup of the leftover marinade. Cook, tossing regularly, over medium-high heat for 3–4 minutes, or until most of the marinade evaporates. Stir in the chopped peanuts and cilantro, then simmer for an additional minute in the pan.

Step:No:05

Serve with rice if you'd like.
