Easy Marry Me Chicken Tortellini Pasta Recipes

We make a fulfilling supper that will please everyone by combining the tasty, creamy sauce, sun-dried tomatoes, bacon, and tender chicken from Marry Me Chicken with cheese tortellini.

 Ingredients:

  1. 4 thick-cut bacon slices
  2. 2 (8 ounce) boneless, skinless chicken breasts, pounded to 1 inch thickness
  3. 1/2 teaspoon freshly ground black pepper
  4. 1 1/4 teaspoons kosher salt, divided
  5. 3/4 cup drained julienne-cut sundried tomatoes in oil with herbs
  6. 1/2 cup finely chopped shallot
  7. 4 large garlic cloves, finely chopped
  8. 1 1/2 teaspoons dried Italian seasoning
  9. 1/2 teaspoon crushed red pepper
  10. 2 tablespoons tomato paste
  11. 1/2 cup lower-sodium chicken broth
  12. 1 cup heavy whipping cream
  13. 1 (20 ounce) package refrigerated cheese tortellini
  14. 1/2 cup pre-grated Parmesan cheese, plus more for garnish
  15. torn fresh basil leaves


Instructions: 

Step:No:01

Compile every component. Pour salted water into a big pot and heat it to a boil over high heat.

Step:No:02

Meanwhile, turn up the heat to medium in a big skillet. Add the chopped bacon and simmer for about 8 minutes, stirring now and again, until it becomes crispy and rendered. With a slotted spoon, remove bacon from skillet and place on a dish covered with paper towels to drain, setting aside about 3 tablespoons of drippings.

Step:No:03

Evenly season chicken with 1/4 teaspoon salt and pepper while bacon is cooking. Add the chicken to the skillet with the drippings and cook over medium-high heat for 5 to 6 minutes on each side, reducing heat if the bottom of the pan turns too black, or until the chicken is browned and cooked through (a thermometer inserted into the thickest area of the chicken reads 165 degrees F, or 73 degrees C). Once the chicken is cool enough to handle, transfer it to a platter and let it sit for about ten minutes. Dice the chicken into small pieces.

Step:No:04

Add the shallot and sun-dried tomatoes and lower the heat to medium. Cook for about 2 minutes, stirring frequently, or until softened. Add the crushed red pepper, garlic, Italian seasoning, and last teaspoon of salt. Cook for about 30 seconds, stirring regularly, or until aromatic. Add the tomato paste and heat, stirring frequently, for approximately a minute, or until the color deepens.

Step:No:05

Add the chicken broth and simmer for approximately a minute, stirring and scraping frequently to deglaze the skillet. Add the cream and simmer over medium heat, stirring. Simmer for 3 to 5 minutes, stirring now and again, until somewhat thickened.

Step:No:06

Place the tortellini in the boiling water and cook for 3 to 5 minutes, or until the pasta is soft and floats to the top. Set aside a cup of cooking water. Empty.

Step:No:07

Add the tortellini, cooked bacon, diced chicken, and Parmesan cheese to the skillet with the cream mixture. Cook, tossing and turning continuously, until sauce is uniformly distributed. To keep a creamy consistency, add 1/4 cup at a time from the conserved cooking water. Split mixture into 6 bowls and top with plenty of fresh basil and more Parmesan cheese.
