Easy Sloppy Joe Casserole Recipes

On a cold winter's day, I love to cook this Sloppy Joe casserole since it's a great comfort food dish. It is a mainstay of potluck meals.

Ingredients:

  1. 1 (16 ounce) package penne pasta
  2. 1 tablespoon olive oil
  3. 1½ pounds ground beef
  4. 1 medium yellow onion, chopped
  5. 1 small red bell pepper, chopped
  6. 1 small green bell pepper, chopped
  7. 1 tablespoon paprika
  8. 2 teaspoons garlic powder
  9. 2 teaspoons kosher salt
  10. 2 (15-ounce) cans tomato sauce
  11. ½ cup ketchup
  12. 2 tablespoons yellow mustard
  13. 2 tablespoons worcestershire sauce
  14. 2 tablespoons light brown sugar
  15. 2 cups frozen yellow corn kernels
  16. 1 ½ cups shredded Colby-Jack cheese, divided
  17. cooking spray

Instrucions:

Step:No:01

When the oven reaches 350 degrees F (175 degrees C), gather the ingredients.

Over high heat, bring a large pot of salted water to a boil. Add the pasta and cook it al dente, following the directions on the package. Empty.

Heat the oil in a large Dutch oven over medium-high heat while the pasta cooks. When the meat is no longer pink, add it and simmer, stirring frequently to crumble it, for about 5 minutes.

Add the onion, bell peppers, paprika, garlic powder, and salt. Cook, stirring often, for about 4 minutes, or until the veggies are tender.

Step:No:05

Add brown sugar, Worcestershire, mustard, ketchup, tomato sauce, and stir. Heat to medium-high. Cook, stirring from time to time, over medium heat for approximately five minutes, or until slightly thickened.

Step:No:06

Take off the heat and mix in the cooked pasta, corn, and three-quarters cup of cheese.

Step:No:07

Grease a 9 x 13-inch baking dish; add the spaghetti and beef mixture to the dish. Evenly distribute the last 3/4 cup of cheese.

Bake for about 20 minutes, or until the cheese is melted, in a preheated oven.

Enjoy and warm up!
