Easy Zucchini Fritters Air Fryer Recipes

 A tasty and simple method to get rid of extra summer squash is to make zucchini fritters. These crispy fritters make a great appetizer, light meal, or side dish. With each bite, the shredded zucchini absorbs the flavors of the herbs and spices, leaving you with a flavorful bite.

Ingredients:

  1. 3 (about 400g) medium zucchini
  2. 75g (1/2 cup) self-raising flour
  3. 40g (1/2 cup) parmesan, finely grated
  4. 3 shallots, ends trimmed, thinly sliced
  5. 1 egg, whisked
  6. 1/4 cup fresh continental parsley, chopped
  7. 2 tsp dried oregano leaves
  8. 1/4 tsp ground nutmeg
  9. 1 tsp salt
  10. 1 tbsp olive oi



Instructions: 


Step:No:01

Trim zucchini ends and coarsely grate. Squeeze out as much extra moisture as you can by placing in a colander. Move to a bowl. Add the egg, parsley, oregano, nutmeg, parmesan, self-raising flour, and shallots.

Step:No:02

In a frying pan that is nonstick, heat one teaspoon of olive oil over medium-high heat. Place three portions of the combination of zucchini into the pan. Cook for 1 and a half minutes on each side, or until well cooked and browned. Move to a platter. Proceed with the leftover zucchini mixture and olive oil.
