Best Chickpea Salad Sandwich Recipes

 My better half, who is a dedicated meat and potatoes guy, was even more impressed when I showed him this. Make this easy sandwich for a last-minute lunch for two, and serve it with some salad, soup, or my personal favorite, potato chips! It's easy, quick, and satisfying.

Ingredients:

  1. 1 (15-ounce) can chickpeas, rinsed and drained
  2. 2 ribs celery, diced
  3. 2 tablespoons capers, rinsed and drained
  4. 3 tablespoons mayonnaise
  5. 2 tablespoons lemon juice
  6. 1/2 teaspoon Dijon mustard
  7. 1/8 teaspoon salt
  8. 2 pinches black pepper
  9. 4 slices sandwich bread
  10. 1/2 avocado
  11. 2 tablespoons roasted almonds, coarsely chopped
  12. 2 to 4 tomato slices
  13. Handful watercress or other greens, such as lettuce, arugula, or spinach 



Instructions:

Step:No:01

Grind the chickpeas: Using a potato masher, roughly grind the chickpeas in a medium-sized bowl.

Step:No:02

To prepare the filling, combine the mustard, mayonnaise, capers, and lemon juice in a bowl. After tasting, add a dash of salt and pepper.

Put the sandwiches together:
Place two sandwich bread slices on a chopping board. Mash 1/4 of an avocado on a slice of toast. Add a small pinch of salt and pepper.


Place a dollop of the chickpea salad on top and then top with 1 tablespoon of almonds. Top with second slice of bread, a few of tomato slices, and your choice of greens. To prepare the second sandwich, repeat.

 Savor: Cut the sandwich in half or eat it whole, and pair it with a side salad or chips.


Remaining food? The size of your bread will determine how much additional chickpea salad you have. The following day, savor it as a substantial snack on a single slice of bread, in a salad, or with crackers.
