My better half, who is a dedicated meat and potatoes guy, was even more impressed when I showed him this. Make this easy sandwich for a last-minute lunch for two, and serve it with some salad, soup, or my personal favorite, potato chips! It's easy, quick, and satisfying.
Ingredients:
- 1 (15-ounce) can chickpeas, rinsed and drained
- 2 ribs celery, diced
- 2 tablespoons capers, rinsed and drained
- 3 tablespoons mayonnaise
- 2 tablespoons lemon juice
- 1/2 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 2 pinches black pepper
- 4 slices sandwich bread
- 1/2 avocado
- 2 tablespoons roasted almonds, coarsely chopped
- 2 to 4 tomato slices
- Handful watercress or other greens, such as lettuce, arugula, or spinach

Grind the chickpeas: Using a potato masher, roughly grind the chickpeas in a medium-sized bowl.

To prepare the filling, combine the mustard, mayonnaise, capers, and lemon juice in a bowl. After tasting, add a dash of salt and pepper.Step:No:03
Put the sandwiches together:
Place two sandwich bread slices on a chopping board. Mash 1/4 of an avocado on a slice of toast. Add a small pinch of salt and pepper.
Place a dollop of the chickpea salad on top and then top with 1 tablespoon of almonds. Top with second slice of bread, a few of tomato slices, and your choice of greens. To prepare the second sandwich, repeat.
