Easy Chorizo Sloppy Joes Recipes

The use of a cunning shortcut adds some spice to our old friend Sloppy Joe. Dinner is done in fifteen minutes!

Ingredients:

  1. 1 1/4 pounds  bulk fresh Mexican chorizo
  2. 1 (8-ounce) package red chile enchilada sauce (preferably Frontera Red Chile Enchilada Sauce with Roasted Tomato and Garlic)
  3. 1/2 cup water
  4. 4 sesame seed hamburger buns, split and toasted
  5. 1 large avocado, thinly sliced
  6. 3/4 cup corn chips (such as Fritos), roughly crushed if needed

Instructions:

Step:No:01

sauté the chorizo: In a cold, nonstick skillet, sauté the chorizo over medium heat for 6 to 7 minutes, turning often with a wooden spoon to break up the meat into smaller pieces.

With a slotted spoon, move the chorizo to a medium-sized bowl. Take out the skillet's drippings and either dispose of them or save them for later. Bring the water and enchilada sauce to a boil on medium-high heat.

Cook the sauce over medium-high heat for a further two minutes, stirring often, or until it thickens just a little. Add the reserved browned chorizo and mix. Cook, stirring constantly, for 30 to 1 minute, or until cooked through. Take off the heat.

Step:No:02

Put together the sloppy Joes by dividing the chorizo mixture equally between the four bottom buns. Arrange sliced avocado, corn chips, and the remaining bread tops evenly on top. Serve right away.

Airtight containers can hold leftover sloppy Joes in the refrigerator for up to three days.
