Although making chicken parmesan is usually a labor of love, this recipe simplifies things for evening meals by letting the air fryer do the work of coating the chicken breast in a mixture of panko breadcrumbs, parmesan, and Italian spice. The outcome is crisp and lovely!
Ingredients:
- 2 boneless skinless chicken breasts, halved horizontally (or 4 cutlets)
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1/3 c. all-purpose flour
- 2 tsp. garlic powder
- 2 large eggs, lightly beaten
- 1/2 c. panko breadcrumbs
- 1/2 c. ground parmesan cheese
- 1 Tbsp. Italian seasoning
- Nonstick cooking spray
- 1 c. marinara sauce
- 4 slices mozzarella cheese (about 4 oz.)
- Chopped fresh basil, to serve
Instructions:
Step:No:01
Sprinkle salt and pepper on both sides of the chicken pieces. Put aside.
Step:No:02
Mix the flour and garlic powder in a small basin. Transfer the eggs to a second shallow bowl. Combine the panko, parmesan, and Italian seasoning in a third shallow bowl.
Step:No:03
Dredge the chicken in the flour, dip it in the egg, and then coat it in the panko mixture, pressing it down as necessary, one piece at a time. Continue until you have breaded every piece of chicken. Coat the breaded chicken all over with nonstick frying spray.

In the air fryer basket, arrange the chicken pieces in a single layer, leaving about 1/2 inch of space between each piece. Cook for six minutes at 375°F in the air fryer. After six more minutes of cooking, flip and continue.
Step:No:05
Spoon each piece of chicken with roughly two tablespoons of marinara after opening the air fryer basket. Put a slice of mozzarella on top of each. Go back to the air fryer and continue cooking for 3 minutes or until the cheese is bubbling and golden brown. Add basil on top.
