Instant Pot Chicken Breast Recipe

 To achieve consistently juicy meat, add liquid (such as chicken stock) to the Instant Pot along with the chicken breast. This will create steam. The best part is that it cooks in little more than 16 minutes!

Ingredients:

  1. 1 tsp. salt
  2. 1 tsp. lemon pepper seasoning
  3. 1/2 tsp. paprika
  4. 1/2 tsp. dried thyme
  5. 4 skinless, boneless chicken breasts (about 2 1/4 lb.)
  6. 2 Tbsp. olive oil
  7. 1 c. chicken stock
  8. 1 Tbsp. cornstarch
  9. 1 Tbsp. lemon juice


Instructions: 

Step:No:01


Mix the paprika, dried thyme, lemon pepper, and salt in a small bowl. Apply the spice mixture evenly on both sides of the chicken breasts.

Step:No:02

After switching to the sauté setting on your Instant Pot, wait two to three minutes for the insert to get hot. After adding a tablespoon of olive oil to the pot's bottom, add two chicken breasts. Takes around 3 minutes to sear until gently browned on one side. After about two minutes, flip it over and sear the other side. Transfer the breasts to a serving dish. Transfer to a dish, drizzle with the remaining 1 tablespoon of olive oil, and repeat with the remaining 2 breasts. Switch off the Instant Pot.

Step:No:03

Using a wooden spoon, scrape out the brown pieces from the bottom before adding the chicken stock. After setting the trivet inside the Instant Pot, stack the four breasts on top of it.

Step:No:04

Place the lid on the Instant Pot and secure it. Close the handle of the steam release. Put the pressure on high and give it a 4-minute timer. After the timer goes off, release the residual pressure manually after letting it drop naturally for four minutes. After removing, transport the chicken to a plate.

Step:No:05

Take the trivet out of the Instant Pot and put it back in the sauté mode. Mix one tablespoon cornstarch and two teaspoons water in a small bowl. Add this to the pot and simmer until the mixture reaches a boil, whisking occasionally. Simmer for one minute, whisking often, or until thickened.

Step:No:06

Drizzle some sauce over the chicken before serving.
