Easy Marry Me Chicken Recipes

There's a chance that this chicken meal can make your wedding dreams come true. The secret is a lovely creamy and cheesy sun-dried tomato sauce.

Ingredients: 

  1. 4 (9- to 10-oz.) boneless, skinless chicken breasts
  2. Kosher salt, to taste
  3. Ground black pepper, to taste
  4. 1/2 c. all-purpose flour
  5. 6 Tbsp. salted butter, divided
  6. 2 Tbsp. vegetable oil, divided
  7. 1/2 small yellow onion, finely diced (about 1/2 cup)
  8. 4 garlic cloves, grated or minced
  9. 1/4 tsp. crushed red pepper
  10. 2 Tbsp. tomato paste
  11. 1/2 c. dry white wine
  12. 2 c. chicken broth
  13. 2/3 c. dry-packed sun-dried tomatoes, sliced
  14. 1/2 tsp. Italian seasoning
  15. 1 c. heavy cream
  16. 1/2 c. freshly grated parmesan, plus more for serving
  17. Flat leaf parsley, finely chopped, for serving



Instructions: 


Step:No:01


To make eight cutlets, prepare the chicken breasts by slicing each one in half horizontally, starting from the thickest end. Sprinkle salt and pepper on both sides of the chicken according to taste.

Step:No:02

Grease a shallow plate with flour. Dredge the chicken in flour, shaking it slightly to remove any excess, and then transfer it to a plate, working with one cutlet at a time.

Step:No:03

A big skillet should be heated at medium-high heat. Melt the butter by adding two tablespoons of butter and one tablespoon of oil. The first four cutlets should be added to the pan and cooked for 4 to 5 minutes on each side, or until golden brown, after the foam has subsided. Move to a fresh platter and continue with the remaining 4 cutlets, 1 tablespoon oil, and 2 tablespoons butter. In between batches, do not clean the pan unless the flour is burning. Turn the heat down to a medium level.

Melt the remaining 2 tablespoons of butter in the same skillet. Add the onion and simmer for about 2 minutes, or until it becomes transparent. Stir in the tomato paste, garlic, and red pepper flakes. Stir and heat for 1 minute, or until the tomato paste has darkened in color and the garlic is aromatic. To deglaze the pan and scrape up any brown pieces, pour in the wine. Give the wine two minutes to decrease by half.

Step:No:05

Simmer after adding the sun-dried tomatoes, chicken stock, and Italian spice. After the sauce reaches a simmer, return the chicken to the pan along with any collected juices, and cook for an additional five minutes. (The sauce needs to get a little thicker.) In order to ensure that the chicken is soft and that all of the flavors have combined, stir in the cream and parmesan and simmer for an additional five minutes.

Serve with mashed potatoes or your preferred quick pasta on the side. Garnish with more parmesan and parsley.
