Easy Cheesy Chicken Taquitos Recipes

One of my favorite Tex-Mex dinners is chicken tacos. These are easy to make and always a hit with guests because they are packed with flavorful, cheesy chicken and seasonings!

Ingredients:

  1. 3 cups shredded cooked chicken
  2. 6 ounces cream cheese, room temperature 
  3. 1 1/2  cups grated Monterey Jack or Mexican blend cheese
  4. 1/4 cup chopped cilantro
  5. 1/2 cup salsa 
  6. 1/3 cup sour cream
  7. 1 teaspoon kosher salt
  8. 1/2 teaspoon cumin
  9. 1/2 teaspoon garlic powder
  10. 1/2 teaspoon ground black pepper
  11. 24 (6-inch) corn tortillas 
  12. Vegetable oil to fry


Instructions:

Step:No:01

Combine the chicken, cream cheese, shredded cheese, salsa, sour cream, cilantro, cumin, garlic powder, and black pepper in a sizable bowl.

Step:No:02

Warm up your tortillas in the microwave for 15 to 30 seconds by wrapping six at a time in a moist paper towel. Wrap them up until you are ready to fill each. As you wrap up the tortilla, this helps keep it from shattering.

Step:No:03

Add half an inch of oil to a big skillet and bring it to 350 degrees Fahrenheit over medium heat.

Step:No:04

Spread a thin layer of two teaspoons of chicken filling in the center of each tortilla, allowing space around the edges. Using metal tongs, roll up the tortilla and drop it seam side down in the heated oil. Hold the taquito together using toothpicks (*See note). Cook for 2 to 3 minutes on each side, or until golden brown on both sides. Arrange to drain on paper towels. Take out the toothpicks.

Continue until all of the tortillas are rolled, filled, and deep-fried.
